Chipotle beer cheese mac
For dinner last night I made some pretty great vegan mac and cheese that I forgot to document. Socca!

pizza party for one
The problem with making an entire normal size pizza for dinner when you’re by yourself is that you end up eating almost the entire thing in a sitting.
I used a store bought pre-made spelt pizza crust and topped it tomato sauce, kale, Gimme Lean sausage pre-sauteed with crushed red pepper and fennel, and mozzarella Daiya.

The name of this dish is a mouthful, a delicious mouthful.

I actually made something the other day called a “hippie loaf”. It’s from my new Happy Herbivore cookbook and you can find the recipe on HH’s website here. My younger self would be appalled, but I’m pretty happy about the ways in which my food tastes have changed over the years.
It was served up with some Happy Herbivore brown gravy and roasted broccoli. Yum!

Our coffee table is tiny, albeit stylish. Most of the time, this works okay. But taco nights, we need a bigger coffee table as taco fillings spread take up multiple dishes and space.
