Vegan MoFo! Day 26: WIAW

What I ate Wednesday! 

I started with So Delicious cultured coconut milk chocolate flavored greek style yogurt (that’s a mouthful to say) with raw granola and chopped pears. The yogurt isn’t too sweet, so I think it’s okay to have it chocolate flavored for breakfast. 

For lunch I had steamed broccoli, roasted delicata squash and dal with millet.

Snack was sliced apple with an almond butter dip (almond butter, water, ground flax, a pinch of salt).

Dinner was Happy Herbivore’s smoky black bean enchiladas that I made in the morning. We didn’t have liquid smoke, so it lacked the namesake smoky flavor. I added some smoked paprika, but I don’t think it worked to the same affect. I will re-do this recipe sometime with all the appropriate ingredients. 

The enchiladas kind of fell apart when being cooked, then reheated, then served. So it was more of an enchilada-esque casserole. Tasty nonetheless when it was served with extra enchilada sauce. I served them with a salsa kale salad - I call it salsa kale salad because it was raw kale massaged with lime juice and a touch of olive oil, then mixed up with sweet peppers, a bit of jalapeno and cherry tomatoes.
