Vegan MoFo! Day 27: dal is delicious

The dal I had yesterday for lunch from my WIAW post was leftover from dinner on Monday night. It was basically the red lentil dal from the Happy Herbivore Cookbook, except Nick made it with brown lentils instead of red. It still turned out great. The stewy sauce was so good with fresh ground coriander. I can’t wait to make this again with red lentils. We served it with jasmin rice and raw kale salad. The sides were just okay, albeit lovely with Nick’s food stylings. But the dal was so flavorful that I could’ve eaten it with sawdust on the side and that would be a-okay.
