Taco Wednesdays: pumpkin nacho sauce!

Last night’s Taco Wednesday was a super healthy and delicious round of tacos. I should have taken more pictures of the individual ingredients. That there is a cabbage taco boat with an heirloom bean salad (beans, a bit of frozen corn, tomatoes, cilantro, lime, chili powder and cumin), sliced avocado, PUMPKIN NACHO SAUCE and some leftover roasted tomato salsa from a burrito order the other night.

This pumpkin nacho sauce was a real game changer, perhaps a life changer. It’s from the blog Awesome Vegan Rad who had the great idea of having nachos multiple times in the past week. The pumpkin really works with the nutritional yeast cheesiness. I will be enjoying the leftovers for the rest of the week and then promptly making another batch.
