pumpkin maple baked bean cornbread casserole

The name of this dish is a mouthful, a delicious mouthful.

The recipe is from the awesome blog Oh She Glows. I’ve made a few things from this blog before and they are always pretty damn good, but this was amazing. This is definitely the type of food you can serve to guests and they would not even recognize that they were eating a vegan meal.

I served it alongside some cider glazed brussel sprouts. I didn’t measure anything and write out a recipe, but the basic recipe is halved brussels and sliced cipollini onions sauteed in a cast iron pan with some olive oil and s&p until it browns, then add a few heavy splashes of apple cider, finally turn heat onto high and stir until most of the cider has been absorbed and evaporated.

This and the tacos earlier this week with pumpkin nacho sauce have been two really good pumpkin recipes. Will I ever get sick of pumpkin?
