Chipotle beer cheese mac
For dinner last night I made some pretty great vegan mac and cheese that I forgot to document. I made a beer cheese sauce with soaked cashews and almonds, almond milk, pale ale, nutritional yeast, turmeric, tamari, lemon juice, maybe some other stuff. I sautéed up some Field Roast chipotle sausage with red onions and cooked up some fusilli. Then I mixed it all up with some frozen corn and extra cheddar Daiya for good measure, topped with bread crumbs, and baked for 15 minutes. It was pretty good if I do say so myself.
